Coffee Fudge?

I’ve seen a million Fudge recipe’s, as I imagine you have too. Most, of course for chocolate, but also Peanut butter, Butterscotch, and white chocolate. And I’m sure that somewhere out there, if we look hard enough we might find coffee, but I haven’t thus far. Since I love coffee, I’ve decided to do some tweaking of my own using a basic fudge recipe. The basic recipe is thanks to Kraft, and with a little tweaking, I’ve made it my own, and have happily used it for years.

Here it is, I hope you enjoy it as much as I do:

1 package, or 8 squares of white chocolate divided

1/2 cup of butter divided

1/3 cup of brewed coffee, made a little stronger than you usually would.

1 3.9 oz pkg of White chocolate Instant pudding

2 1/2 – 3 cups of powdered sugar

LINE 8-inch square pan with foil, with ends of foil extending over sides. Microwave 4 chocolate squares, 6 Tbsp. butter and coffee in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir. Add dry pudding mix; stir 2 min.

ADD powdered sugar, 1 cup at a time, stirring after each addition until well blended. Press onto bottom of prepared pan.

MICROWAVE remaining chocolate squares and butter in large microwaveable bowl 1-1/2 min. or until butter is melted. Stir until chocolate is completely melted. Spread over pudding mixture. Refrigerate 2 hours or until firm. 2 1/2 – 2 3/4 of a cup of powdered sugar.

To Make Mocha fudge:

Replace white chocolate squares with semi sweet chocolate, or milk chocotate.

White chocolate pudding with standard chocolate pudding

Note if using semi-sweet chocolate, then up the content of powdered sugar to 3 cups.

Or mix, and mach any flavor of chip/pudding.
