High fat doesn’t necessarily mean unhealthy, nor does low fat necessarily mean healthy. Guacamole is very healthy, as avacodo’s have good fats in them, as well as antioxidants. Funny, although I’m not crazy about avocado, by itself, I can’t get enough guacamole. But it tends to be high fat, so I wanted to minimize the fat, while still keeping the flavor. I’ve seen recipe’s for low fat guacamole made with green pea’s and no avocado. While it’s good, it’s not guacamole, it’s just a green pea dip. But it is a useful way to lover the fat of classic guacamole, so I thought I’d work it in to avocado, along with a few other ingredients for a lower fat version. Keep in mind, that you don’t need to eat it the classic way, with chips. Use it instead of mayo, in Egg salad, Tuna, or Chicken salad. (Or any kind of salad, where you’d normally use mayonnaise) Use it as a spread for bread, or corn tortillas, instead of butter. Use it as a spread on bread, with any kind of meat, or meat alternative. Use it any way you want. You’re not “required” to only eat it the classic way. Be creative. I hope you enjoy it as much as I do:

3 tbsp minced red onion

1 tsp minced fresh chile

1/2 tsp ground cumin

1 cup corn (frozen is fine)

2 cloves Garlic, pressed, or finely minced

1/2 of an avocado pitted & peeled

1/2 cup of thawed green peas

3 tbsp fresh lime juice

2 tsp of corn or canola oil

2 tsp cider vinegar

1 tbsp fresh minced fresh cilantro, or minced fresh mint

Salt & pepper to taste

In a bowl, mix together the corn, red onion, garlic, chile, and oil. Spread that mixture in to a pan, over medium heat, and stir fry, stirring often, until the corn, is golden. (btwn 5 & 10 minutes. ) set aside to cool.

Combine avocado, peas,lime juice, vinegar & cilantro or mint. in a food processor, or blender. puree, pour into a bowl, then combine that with the corn and onion mixture.

Eat right away, or refrigerate. Since avocado, tends to brown, I find it does best covered with plastic wrap. But it’s browning, wont effect it’s taste a bit.

Makes about 2 cups.
