Lettuce Wraps

Tina offers plenty of recipes on her website, but I was craving something particularly easy to make and fresh for a healthy dinner on a hot 90 degree summer day. This preference threw me to Tina’s delicious Lettuce Wraps. Filled with my personal choice of juicy grilled chicken cubes paired with crunchy, fresh fillings like peppers, cucumber, kohlrabi, and carrots (all drizzled with balsamic dressing), I revamped Tina’s lettuce wraps with my own Absolutely Appetizing twist. All you have to do is thank Tina by reading her blog, and then hop on my A-Train and enjoy my version of Tina’s inspired salubrious meal.

Abby’s Lettuce Wraps

What You’ll Need:

3 crisp romaine lettuce leaves
carrots, diced
mixed peppers, diced
kohlrabi, diced
cucumber, diced
grilled chicken, cubed
balsamic vinaigrette

What to Do:

Grill chicken on a skillet in olive oil for 5-10 minutes, turning, until no longer pink in the middle. Be careful not to overcook the chicken to avoid chewy pieces.
Load each lettuce leaf with a little of each vegetable and chicken. Drizzle with balsamic dressing. Wrap filling with leaf, and enjoy!
