Simple, Healthy Roasted Corn

It’s a really easy, and healthy was to enjoy corn. Roasting, in a bit of oil, gives it more of a sweetness, and adds a nutty flavor to it.


2 cups of corn (fresh, or frozen kernels)

6 tbsp of minced red onion (ok to omit, if onion, bother’s you)

1 tsp curry powder

2 tsp of minced fresh chili

4 cloves of pressed or finely minced garlic

1 tbsp plus 1 tsp corn or canola oil


Preheat Broiler

In bowl, mix together corn, onions, curry powder, chili, garlic, and oil. Spread in to pan, and roast. for about 10 minutes, stirring about 3 times throughout the roasting process. Once the corn, is tender and golden brown, remove from, broiler. It will look very slightly charred. Let cool.

You can add a few snips of fresh rosemary to it, a squeeze of fresh lime juice is always good, or a dollop of plain low fat yogurt.

Can be served with anything. Always nice with freshly roasted chicken, of fish.

Can be eaten cold.

Also can be used in an omlette.

Can be used almost anyway you like to use corn.
